Roasted Grapes with Lemon Ricotta

 
I came across a recipe for roasted grapes in Athena Calderone's book, Cook Beautiful, and have had it in my mind ever since. It makes for a delicious lunch or snack and is something you can easily rustle up at home and feel like you have gone to a café. Athena's beautiful website Eyeswoon is just that and is full of stunning interiors and delicious recipes.

I switched the pinenuts for pistachios as that is what I had in the pantry. You can also make a vegan option buy substituting the ricotta to hummus and either leaving out the honey or using maple syrup instead.
